Water that touches product or people is governed by SANS 241 — treatment of the source, disinfection, and the monitoring and records that prove the water is safe, at the high washdown and process volumes these plants run.

Disinfection chemistry matched to the duty — the right chemistry, concentration and contact time for the application — dosed to a controlled concentration and monitored, because under-dosing is a food safety risk and over-dosing is waste.
High-load effluent
High in organic load, fats and solids, designed against the plant’s discharge limits under DWS requirements, with coagulation, flocculation and separation removing much of the load.
